    1 package whole grain four cheese tortellini, Buitoni
    1 jar Barilla pasta sauce
    2 small organic zucchini, chopped
    1 med organic yellow squash, chopped
    1/2 med onion, chopped
    1 large clove garlic, minced
    1 tbsp olive oil
    3 oz grated parmegianno reggiano
    4 oz shredded part skim mozarella


Preheat oven to 400 F.

Place 1/2 cup of the pasta sauce in the bottom of a casserole dish.
Arrange the tortellini in a single layer over the top, cover with 1/2 cup water.
Sprinkle with 1 oz of grated parmesean cheese.

Add 1 tbsp olive oil to a skillet heated over medium heat. Add onion and cook for 3 minutes. Add squash and garlic adn cook for an additional 5 minutes. Add remaining pasta sauce, cover, and simmer for 5 minutes until the squash starts to soften.

Pour the squash and sauce mixture over the tortellini. Sprinkle with the shredded mozarella and remaining parmesean.

Bake in the oven for approx 20 mintues, until the cheese on top begins to turn golden brown and forms a crust.
