    *Flour, white, 1.5 cup
    *Whole Wheat Flour, 0.25 cup
    *Splenda Sugar Blend for Baking, 8 tsp
    *Baking Powder, 2 tsp
    *Egg white, 2 serving
    *Applesauce, unsweetened, 0.25 cup
    *Pumpkin Pie spice, 1 tbsp
    *Cinnamon, ground, 1 tbsp
    *Vanilla Extract, 1 tbsp
    *Banana, fresh, 3 medium (7" to 7-7/8" long) mashed
    *Milk, 1%, 0.5 cup
    *Flax Seed Meal (ground flax), 5 tbsp


Oven 400 degrees.
1. Grease ten 2 1/2 inch muffin cups; set aside. In a medium mixing bowl combine flours, sugar substitute, baking powder, pumpkin pie spice, cinnamon, and ground flax seed. Make a well in center of dry mixture; set aside.
2. In another mixing bowl combine egg whites, milk, vanilla, applesauce, and mashed bananas. Add egg mixture all at once to the dry mixture. Stir just till moistened.
3. Spoon batter into prepared muffin cups, filling each 2/3 full. Bake in a 400 degree oven 20 minutes or till golden. Cool in muffin cups on a wire rack for 5 minutes. Remove from muffin cups; serve warm. Makes 10 muffins.
