Ingredients

    Ingredients:


    Bacon, 2 medium slices, cooked
    Egg, fresh, 1 jumbo
    Milk, 1%, .5 fl oz
    Peppers, sweet, red, fresh, 3 tbsp
    Onions, raw, 1 tbsp chopped
    Celery, raw, 1 tbsp
    Smoked Gouda Cheese, .65 oz


Directions

Chop veggies and slice smoked gouda into matchstick sized pieces.

Fry bacon in pan until crispy, then set aside on a paper towel to drain. Reserve just a light coating of bacon grease in pan. Discard the rest.

In a mixing bowl, whisk together egg, milk, peppers, onions, celery, and smoked Gouda cheese. Crumble crisp, drained bacon and stir into mixture. Pour into heated pan and cook until done to taste (towards the end, you can flip it like an omelette or cover it for a few minutes to cook the top and call it a fritatta) .

    Very Good
    Smoked gouda in an omelette is a great idea that I never tried and it was delicious with the red pepper! I like that you're cooking with "real food" too and not margarine, fake meat or egg white substitute. Kudos for a yummy recipe that satisfied my husband too. - 12/5/10
