    Preheat oven to 400.
    Cut squash in half and clean seeds and membrane.
    Place squash cut side up and bake for 1 hour.

    While squash is baking, prepare meat sauce.

    Add oil to pan and warm.
    Add chopped celery, carrot, and onion. Cook 2-3 min until tender.
    Add ground turkey and brown, breaking into small pieces.
    Add crushed tomatoes and wine. Simmer and reduce liquid.
    Add seasonings to taste, I used 1 bay leaf, a pinch of oregano and thyme, salt and pepper.
    Simmer at least one hour.

    When squash is done, remove flesh with a fork, It resembles spaghetti. Top with meat sauce and parmesan cheese.


Makes 6 -1 cup servings.
