Ingredients
-
1.25 lbs ground turkey, lean
1 can Black Beans, drained & rinsed
1 can Red Kidney Beans, drained & rinsed
1 14.5 oz can of tomato sauce (no salt added)
1 6 oz can of tomato paste (no salt added)
4 gloves garlic, chopped
1 onion, medium, chopped
1 red bell pepper, chopped
1 green bell pepper, chopped
1 large red tomatoes, chopped
1 large yellow tomato, chopped
4 red or green jalepenos, deveined, deseeded, and chopped
3 TB ground cumin
2 TB chili powder
1 TB black pepper
1 TB salt (or to taste)
Directions
Pour olive oil in skillet with 1 clove garlic and cook turkey on medium until browned.
In large stew pot, add all remaining ingredients and cover with water. Note: You can add more peppers, and add serrano peppers, if you desire a spicier chili.
Bring to a boil, then simmer loosely covered, stirring occassionally. Simmer 1-2 hrs. The longer you simmer, the more flavor the chili will have.
Makes approx. 12 - 1 cup servings. If you like, garnish with low fat shredded cheese, lite sour cream, or any of your favorite toppings.
