    2-3 Golden beats
    10-12 brussels sprouts
    1Shallot peeled and sliced
    1Tbsp olive oil
    1Tbsp fresh thyme or 1 tsp dried
    2Tbsp roasted almond slivers
    salt and peppere to taste


serves 4.
boil Beets in water on the stove top for apx.45 min, or bake in oven at 350 for 1 hr.15 min.
let cool for about 10.min. peel and cut into 1 X 1/2 inch.
Toast almondson med.high turning often, if you start with raw slivers.
Remove any outer leaves on brussels sprouts being to a boil in saucepan, parboil for about 3 min. let cool and cut into 1/2s.
In medium skillet heat oil,add shallot slices and cook until translucent, raise the heat to med.high and add the beets and sproutsadd the thyme mix well.Add salt and pepper to taste,cook for a minute or two longer.remove from heat and serve.
