Introduction

I combined a couple of recipes on SP to make my own version of tomato-basil soup...delicious! I combined a couple of recipes on SP to make my own version of tomato-basil soup...delicious!
Number of Servings: 6

Ingredients

    4 cups tomato juice
    4-5 fresh tomatoes
    1 cup skim milk
    1/2 cup onions
    1 clove garlic
    1/2 cup basil
    1 tablespoon olive oil
    1 teaspoon balsamic vinegar

Directions

1. Heat tomato juice in a stock pot. Chop tomatoes and add them to pot. Bring to a boil, then reduce to a simmer.

2. Saute onion and garlic in olive oil for about 4-5 minutes. Once they are tender, add to pot.

3. Simmer soup another 30 minutes, then remove from heat and allow to cool.

4. Once soup is room temperature, add basil and run it through a blender until it reaches desired consistency. Return to stock pot.

5. Add milk and vinegar and simmer another 15-20 minutes. Serve immediately, or freeze for later use.
