This is a slimmed down made up version of my own meatball stoup that makes a good hearty meal all by itself. This is a slimmed down made up version of my own meatball stoup that makes a good hearty meal all by itself.
Number of Servings: 16


    1 cup + 2 Tbsp onion, chopped
    1 cup celery, chopped
    3 cloves garlic
    1 Tbsp Olive Oil
    2 Cans (14.5 oz) low fat, low sodium beef stock
    2 cups carrot, diced
    3 cups Yukon Gold Potatoes, diced
    2 cans (14.5 oz ) low sodium diced tomatoes (could use Italian style)
    1 can low sodium red kidney beans
    1 can low sodium white kidney beans
    2 Tbsp Italian Seasoning
    6 cups water

    1 1/4 lbs Extra Lean Groun Beef (96/4% fat)
    2 Tbsp finely chopped onion
    2 tsp Garlic Powder
    1 Whole Egg
    2 Egg Whites
    1 Tbsp Worcestershire Sauce
    1/2 c Italian Style Bed Crumbs


In heavy Stock pot saute 1 Tbsp Olive Oil, onion, celery & garlic until transparent. Add 2 cans of tomato and 2 Tbsp Italian Seasoning and continue cooking another minute, next add 2 Cans of Beef Stock, Carrots, Potato and simmer until carrots and potato are tender. In the mean time, combine ground beef, eggs, eggs, onion, Bread Crumbs, Garlic Powder and Worcestershire sauce in a large bowl mixing well. Form meat mixture into 1 inch balls and drop into soup, continuing to simmer another 30 minutes or so until meatballs are cooked.

Yield: 16 - 2 cup servings
