These hearty whole wheat pancakes contain NO white flour. These hearty whole wheat pancakes contain NO white flour.

    1/2 cup whole wheat flour
    1 tbsp wheat germ
    3/8 cup nonfat milk
    1 egg white
    1/5 tsp baking powder
    2 tsp brown sugar
    1/4 tsp vanilla
    dash of salt


This makes 4 4-inch pancakes - light breakfast for two, or hearty brunch for one.

Separate egg and add egg white and milk to the bowl. Mix thoroughly. Add salt and vanilla. Add remaining dry ingredients and mix lightly. Add water if the batter thickens too much.

Serve with a light maple syrup
