Ingredients

    1 lb boneless, skinless chicken breast, diced
    14.2 oz (1 pkg) andouille sausage, 1/2" slices
    1 lb shrimp, shelled & deveined
    2 tilapia filet
    2 snapper filet
    3 cans diced tomatoes, with juice
    6 cloves garlic, minced
    6 serrano peppers, chopped
    6 celery ribs, chopped
    1 large onion, diced
    1 lb okra, diced
    3 cup brown, long-grain rice, uncooked
    1 bunch fresh parsley chopped
    1 box vegetable broth
    1 box chicken broth
    1 can black olives, sliced
    1 lemon, juice yields
    1 bunch fresh cilantro, chopped
    hot pepper sauce, to taste

Directions

Spray cubed chicken, andouille sausage slices & cooked shrimp with olive oil, braise in non-stick frying pan 3-4 minutes each side. Add to large soup pot. Add remaining ingredients, bring to a boil over medium high heat, then reduce heat to simmer. Simmer for 35 minutes, or until rice is tender. Add salt & pepper to taste. Serves 10.
