    6 slices bacon, cut into pieces
    3 small potatoes, grated
    5 large eggs
    1/2 c shredded cheddar cheese
    4 soft taco sized flour tortillas
    Taco sauce or salsa optional


Slice bacon and put in frying pan. Once bacon starts cooking, add potatoes. Cook until hashbrowns and bacon are almost done. Beat eggs and pour over hashbrowns. Season to taste. Cook until eggs are done. Divide into quarters and add to tortillas, sprinkle on cheese, add salsa or taco sauce, roll into burritos.
