    1 tbsp. cornstarch
    2 tsp. ground ginger
    1.5 tsp. garlic, minced
    1/3 cup reduced-sodium soy sauce
    2 tbsp. low sodium chicken broth
    1.5 lbs. boneless, skinless chicken breasts, thinly sliced
    12 oz. uncooked linguine
    1/4 lb. fresh snow peas
    1 1/2 cup broccoli, fresh chopped
    2 large sweet red pepper, julienned
    2 green onions, chopped
    1 1/2 tbsp. canola oil
    4 tsp. sesame oil


1. Preheat oven to 350 F.

2. Combine ginger, garlic, cornstarch, soy sauce, canola oil, and broth in a large bowl until smooth. Add chicken and stir to coat; marinate in fridge for about 20 minutes.

2. Cook linguine to packaged directions (boiling).

3. Steam vegetables: snow peas, red pepper, and broccoli until crisp-tender; add green onion and set aside.

4. Bake chicken mixture in 9 x 9"casserole dish for about 18 minutes or until chicken is done to internal temperature of 170 F.

5. Drain linguine noodles and toss with sesame oil. Add vegetables and cooked chicken mixture with remaining marinade sauce. Toss to coat.

Yields 8 servings.
