Introduction

Hearty, healthy with a fresh flavour. On the table in about 30 minutes. Ingredients

    *Canned, Diced Tomatoes, Blue Menu, No Salt Added, President's Choice, 28oz liq = 796ml
    Chicken Breast, no skin, 24 ounces
    Green Peppers (bell peppers), 1 cup, chopped
    Onions, raw, 1 medium (2-1/2" dia)
    mango peach salsa - one cup
    Garlic, 5 cloves
    *chilli powder, 4 tsp
    *chick peas, canned (Unico), 2.375 cup (19 oz can)
    *Beans, Unico White Kidney, 2.375 cup (19 oz can)
    Cilantro, raw, 4 tbsp
    Pepper, black, 1 tsp

Directions

Add tomatoes to a large pot. add diced pepper, onion and garlic. Bring to a boil. add diced raw chicken. Bring back up to a boil. Stir. Reduce to low and add chili powder, pepper and mango salsa. Simmer for 10 minutes until chicken is cooked. Rinse beans and add to pot with cilantro. Stir and simmer for another 10 minutes until beans are heated through. Serve with a dollop of fat reduced sour cream ( not included in recipe) Generous 1 cup serving.
