    .75 lbs red potatoes, scrubbed and diced
    1/3 cup fat free milk
    1/4 tsp salt
    dash of pepper
    1/2 tsp olive oil
    1 garlic clove, minced
    1/2 carrot, chopped
    1/2 onion, chopped
    1/4 lb cremini or white mushrooms, chopped
    .75 tbsp all purpose flour
    1/4 lb green beans, trimmed, chopped, and lightly steamed
    6 ounces ground turkey


1. Preheat the oven to 400 degrees F. Place the potatoes in a medium saucepan and add cold water to cover; bring to a boil. Reduce the heat and simmer until fork tender, 10-12 minutes. Drain well, then mash with the milk, salt, and pepper.

2. Meanwhile, heat a large nonstick skillet; swirl in the oil. Saute the garlic, carrot, onion, and mushrooms until they begin to soften, about 5 minutes. Add the turkey and thyme; cook, breaking apart the meat with a wooden spoon, until no longer pink, 5-8 minutes. Stir in the flour; cook, stirring, 2 minutes. Stir in the broth; cook until thickened, about 2 minutes.

3. Transfer the turkey and vegetables to a shallow 2-3 quart casserole pan. Top with the beans, then spread on the potatoes. Bake until the potatoes are heated through about 5 minutes.
