    1 tbsp olive oil
    1 tsp salt
    1 tsp pepper
    2 chopped onions
    1 package frozen spinach
    3 cups chopped fresh tomatoes
    2 cups cooked brown rice
    2 cups cooked lentils


Heat olive oil in pan, add salt and pepper, add onions and cook over medium heat until soft. Add spinach and tomatoes. If spinach is still frozen, cook until water boils off. Add rice and lentils, cook until heated through or crispy.
