    1 tbsp olive oil
    2 small/medium onions, chopped
    2 tbsp ginger, finely minced or grated
    2-3 lbs of carrots, peeled and roughly chopped
    4 c. chicken or vegetable broth
    1 c. orange juice
    1 c. milk
    1 c. reduced fat sour cream (you can use fat free)
    salt and pepper


Soften onion and ginger in oil. Add carrots, broth and orange juice. Simmer until carrots are soft. Blend with immersion blender. Stir in milk, sour cream, salt and pepper. Heat on low until cooked through. Serve garnished with chives.
