Ingredients

    14 oz trimmed steak chopped into cubes (or chicken if you prefer)
    1 cup chopped carrots
    1 cup fresh spinach
    4 small potatoes
    1 large cooking onion chopped
    4-5 cloves of garlic chopped
    1 inch of garlic root peeled and diced
    1 540 ml can of chick peas, drained
    1 cup low fat chicken stock
    2 tbsp curry powder

Directions

add onions, garlic and ginger in a low pot and "sweat" on low heat for 5-7 minutes, until onions are slightly translucent.
Add all other ingredients and allow to simmer for 50-60 minutes.
serve over brown rice if desired.
