    2.75 cups vegetable stock
    1.75 cups dried Couscous
    1.5 cups frozen Peas
    0.5 cup pine nuts
    2 large onions, chopped
    2 cloves garlic, crushed
    3 tbsp olive oil
    2 small courgettes/zucchini, chopped
    3 medium tomatoes, diced
    2tbsp curyy powder
    0.5 cup parsley


Serves 4

-Bring Stock to boil with a tight fitting lid
-Remove from the heat and add the couscous, peas and salt to taste
-Stir to combine and then leave for about 5 mins.
-Meanwhile, Saute the onions and garlic in the oil for about 5 mins
-Add the courgette, tomatoes and curry powder, cook until the courgette is just tender
-Fluff the couscous and transfer to a large bowl
-Add the Vegetable mixture, pine nuts and parsley and toss to combine
