    Egg substitute 0.6 cups
    2.5 cups low fat milk
    0.5 tsp Salt
    0.5 tsp Pepper
    1 lb white bread
    1 10 oz pk of spinach
    1 tbs olive oil
    1 cup,onions
    1 cup rerd bell pepper
    4 cup sliced mushrooms
    1 clove garlic
    1 cup tex mex cheese blend


Makes 4 2 cup servings
beat egg white, milk, ginger,chili, and pepper.
Add cut up bread and mix well and let sit for 30 mins
thaw spinach
add onion oil and bell peper and cook in frying pan add musrooms and cook until brown
Add spinach
Combine the mushroom mix and egg mix together and place in a 8x8 pan or baking dish
Cook 60 min @350
