Mexican Lasagna Mexican Lasagna

    Corn Tortillas, 2 tortilla, medium
    Sweet Corn, frozen, .5 cup
    Beans, pinto, .1 can, washed
    no fat refried beans 1 can
    small can chopped green chilis
    1 cup chopped tomatoes
    1/2 anaheim pepper (or Jalapeno)
    Onions, raw, 1 cup, chopped, divided
    Ground beef, lean, 16 oz
    1 cup favorite enchilada sauce
    2 ounces of cheddar cheese (grated)


Mix green chili's into refried beans - set aside. Brown ground beef with 1/2 cup onions and some garlic - set aside. Chop tomatoes and pepper and add rest of onions - set aside. Prepare enchilada sauce (if necessary) - set aside.

Now layer all ingredients starting with tortilla. Bake for 1 hour. Freezes well. If serving immediately - sprinkle cheddar cheese on the top during the last few minutes of baking.
