    1 lb ground lamb
    1 large egg
    1/4 cup whole wheat bread crumbs
    1 tbsp minced/chopped garlic
    1/4 cup fresh parsley chopped or 1/8th dried
    2 tbsp fresh oregano chopped or 1 tbsp dried
    2 tbsp chopped fresh spearmint or 1 tbsp dried
    4 ounces shredded zucchini
    3/4 cup grated/finely chopped red onions


Combine all ingredients. Using a 1/4 cup measure, form each meatball and shape into an oblong patty or "mini slider". You can cook in a lightly sprayed nonstick pan or bake them. You can substitute ground turkey or chicken.

Makes 12 patties/2 patties per serving
