Ingredients

    1 cup dry Light Bulgur (presoak in 1 cup boiling water)
    1 15.5 oz cans Garbanzo Beans (SW 50% salt)
    8 green onions, chopped
    4 Tbsp chopped Cilantro
    2 c Cauliflower, chopped into bitesize pieces
    2 c English Cucumber Seedless, diced
    1 c Tomato, diced
    Juice & Zest of 1 small Lemon Juice

    1 packet salt free Herb Ox dry Bouillon for 1 cup equivalent
    2 c water

Directions

makes 9 one-cup servings

pre-soak 1 cup uncooked Light Bulgur in 1 cup boiling water (use chicken bouillon here, optional). Cover and let stand 20 mins while veggies are prepared.

Combine all pre-cut, chopped veggies in a large bowl with the Bulgur, zest and lemon juice and another 1 cup water.

Add spices to taste. I used 1 tbsp garlic powder, 1 tbsp Italian herbs, 1 tsp ground coriander, 1 tsp ground cumin, 1 tsp red cayenne pepper, 1 tbsp paprika.

Chill, serve cold. Better 2nd day after flavors blend.
