    Stir Fry:
    1 pound chicken, cooked and chopped into small pieces
    1 small head cabbage, sliced
    1 can (11 ounces) mandarin oranges, drained, juice reserved
    1/4 cup green onions, diced
    1/4 cup cilantro, chopped
    1/4 cup chives, chopped
    2 cloves garlic, minced

    1/4 cup chicken broth
    2 tbsp soy sauce
    2 tbsp teriyaki sauce
    2 tbsp. mandarin orange liquid (throw rest)
    1/4 cup fresh orange juice
    1/4 cup cashews, chopped

    1 cup brown rice--prepared (makes 6 servings)


In a wok or large pan, cook the chicken with 1 tbsp. oil. When cooked through, add cabbage, mandarin oranges, onions, cilantro, chives, and garlic. Cook through.

In a small bowl, combine the broth, soy and teriyaki sauces, mandarin liquid, orange juice, and cashews. Mix. Poor into wok when it is almost done. Heat through.

Serve over or with rice.
