Introduction

Lightly sweet and ultra-decadent, this simple recipe comes together in no time and yields awesome results. Serve with fresh fruit and a spring of mint.

It can also be modified by adding nuts, diced fruit, peanut butter, shredded coconut, chocolate chips, etc... My favorite combo is chopped macadamia nuts and drained pineapple bits.

Number of Servings: 6

Ingredients

    1 15oz can of coconut milk
    2 tbsp xylitol (or to taste)
    2 tbsp unsweetened cocoa powder
    1/2 cup unsweetened plain almond milk

Directions

whisk together all ingredients until thoroughly combined, transfer to a freezer-safe container with a lid. Place in freezer for 2-3 hours, stirring every half-hour.

You could also use an ice-cream maker if you're so equipped.

Makes about 6 servings depending on how you scoop.
