Ingredients

    2 15oz cans of Black Beans
    4 Chicken Sausage Links chopped into bitesize pieces
    1 14.5 oz can of diced tomatoes
    1 6 oz can of tomato paste
    1/4 large onion diced
    1 cup sliced carrots
    1 medium chopped tomato
    1 cup chopped celery
    1 tsp. cayenne pepper
    1 tsp. crushed red peppers
    1 tsp. cumin
    1 tbsp. fresh or dried parsley
    1 tsp. fresh or dried cilantro
    2 cloves garlic minced

    Makes 12 - 1 cup servings

Directions

Mix all ingredients in a large soup pot. Add 1 cup water with tomato paste. Bring to a boil and reduce heat. Simmer until vegetables are soft or all day! Enjoy

    I loved this recipe!! I let it simmer for 5 hours and it awesome!! My husband thought it was a bit too spicy so I may take it down a notch. - 10/18/07
