    1 (16oz) package of dried green split peas, rinsed
    2 cups diced ham with the fat carefully removed
    3 carrots peeled and sliced
    1 large onion diced
    4 ribs of celery and leaves
    2 tsps of minced garlic
    1/4 cup fresh parsley chopped
    1/2 tsp salt
    1 tsp pepper
    5.5 cups hot water

    Layer ingredients in the crock pot in order. Pour water in. DO NOT STIR INGREDIENTS.

    Cover and cook for 4 - 5 hours on HIGH or 8 - 10 hours on low until peas are very soft.

    Stir and serve.
