Adapted from recipe. So few calories per muffin that you can eat the whole batch!! Adapted from recipe. So few calories per muffin that you can eat the whole batch!!
Number of Servings: 6

1/2 C fit and active egg substitute
    1 C spinach, chopped, fresh
    1 T bacon bits
    1 T plus 1 t grated parmesan cheese
    dash salt
    dash pepper

In a bowl, combine egg substitute, chopped spinach, bacon, 1 T cheese, salt and pepper. Mix. Spoon into well greased mini muffin tin (I used I can't believe it's not butter spray, 1 spray per muffin). Top each muffin with remaining parmesan cheese. Bake in 375* oven for 10-12 minutes. Mine needed 12. Per greenlitebites suggestion, I used a silicon muffin tin (AMAZING). Came right out after they were done.
