Introduction

This is a loaded Baked Ziti that we actually got to serve to the Volunteer Team at an Extrememe Home Makeover here in Florida.
What ia different about this Ziti is there is no cheese topping. In my house that was always fought over so I have changed up the recipe so that everyone's piece is loaded with cheese

Number of Servings: 20

Ingredients

    1 102oz can crushed tomatoes
    2 1/2 pounds lean ground beef
    4 onions chopped
    3 carrots shredded
    3 celery stalks very finely chopped
    3 cloves garlic minced
    1 32 oz container Ricotta cheese low fat
    1 pound shredded mozzarella
    2 boxes ziti
    2 cups red wine
    italian spices~ whatever you like...I don't measure mine so I can't tell you what to use :0)

Directions

Brown your beef and make sure it is seperated well (be sure to season w/s&p)

Saute your onions in the beef's fat once they are almost done add the shredded carrot, finely chopped celery and minced garlic. be sure to add s&p

Once all veggies are soft add the entire can of sauce. Also add one half can of water. This is when you will also add your spices. Bring this to a boil and allow to simmer for a good 2 hours.
Taste and adjust seasonings
Add red wine..bring to boil, reduce to simmer,,,at least an hour
taste correct seasoning.. Add 1 cup mozzarella and allow to simmer for 30 minutes.

Boil your pasta til al dente
Drain well
In large bowl mix ricotta cheese and the remaining mozarella. Add this to the saice mix well. Add pasta and be sure it is well incorporated.
Pour into 2 large casseroles bake for 30 minutes covered.
Enjoy
We serve 10 out of each casserole
