Introduction

This is a wonderful Mexican-style guacamole. Is great on tacos, chips, and rice. Recipe yields about 3 cups. I don't recommend using the bottled lime juice for this recipe, I feel like the flavor is just strange to be eaten on something that isn't going to be cooked. Ingredients

    1 Avocado
    1 Roma Tomato
    1/2 Onion
    1/2 Cucumber
    1/2 cup Fresh Cilantro
    About 1 jalapeno pepper from can (Like the kind for nachos)
    Juice from 1-2 Limes
    1 Tbsp Vinegar from Canned Jalapenos
    Salt to taste

Directions

1. Dice all ingredients into small pieces 1/2" and place in medium bowl. Don't forget those canned jalapenos, too. For the cilantro, cut off the ends of the stems and finely chop the leaves.

2. Half (or quarter, whichever makes it easiest to squeeze) lime and squeeze all the juice over veggies.

3. Drain 1 Tbsp of vinegar from the canned jalapenos and pour over veggies. Add salt to taste.

4. Lightly stir mixture and serve.

Yields about 6 1/2 cup servings.
