Introduction

Ingredients

    1.3 lbs Ground turkey
    poltry seasonings, cumin
    1-14.5oz can stewed tomatoes
    1 8oz can tomato sauce
    1 med yellow onion, diced
    roasted red peppers,
    1 zucchini, sliced
    5 red ripe tomatoes, diced
    1-2 cups forzen corn
    1 can Goya black beans
    1 (or 2) chipotle pepper in Adobo sauce, chopped
    2 cups vegetable stock
    2-3 cups whole grain tortilla chips, crushed/crumbled


Directions

Brown turkey in large soup pot. add seasoning, remove. Saute onion, garlic and peppers add turkey and remainaing ingredients. Season to taste. simmer 30 minutes.

top with tortilla chips, cheese, onion, sour cream, guac, whatever your heat desires. (topping not included in nutriional info).
