    1/2 tbsp sesame oil
    1 medium onion, chopped
    1 lb (450g) cooked chicken, diced
    3 tbsp light soy sauce
    2 carrots, diced
    1 celery stalk, diced
    1 red bell pepper, seeded and diced
    1 1/2 cups fresh peas
    3 1/2 oz (100g) canned corn kernels, drained
    4 cups cooked long-grain brown rice
    2 large eggs, scrambled


1. Heat the oil in a large skillet over medium heat. Add the onion and fry until softened, then add the chicken and 2 tbsp of the soy sauce and stir-fry for 5-6 minutes.

2. Stir in the carrots, celery, bell pepper, peas, and corn and stir-fry for an additional 5 minutes. Add the rice and stir thoroughly.

3. Finally, stir in the scrambled eggs and the remaining soy sauce. Serve immediately.
