    4 chicken breasts (post-cooking weight slightly over 1 lb)
    10 oz can of Low Fat Cream of Mushroom Soup
    2 cups White Rice, long grain
    1 1/2 cups Milk, nonfat
    1 envelope dry LIPTON, RECIPE SECRETS ONION, Mix
    1 cup Mushrooms, fresh, sliced


Preheat oven to 375*.
Mix cream of mushroom soup, milk, rice, mushroom slices, and most of the onion soup mix in a large bowl. Pour into a large glass baking pan.
Rinse chicken breasts and pat dry. Season liberally on one side with salt, pepper, and whatever other seasonings strike your fancy. Place the chicken, seasoned side down, on top of the rice. Sprinkle the remaining onion soup mix over the top of the chicken pieces.
Cover tightly with aluminum foil. Bake, covered, for 35-40 minutes. Remove cover and cook 10-15 minutes more, or until chicken is cooked through.
Serving size is 3-4 oz. chicken, and 1/2 cup of rice.
