    1 T canola oil
    5 boneless, skinless chicken thighs, cut into 1/2" pieces
    1 large baking potato, cut into 1/2" pieces
    1 medium onion, chopped
    4 cloves garlic, crushed
    6 C fit and active chicken broth
    1 can diced tomatoes with chiles
    1 can corn, drained
    1/3 C plus 1/4 C salsa con queso
    1/3 C fit and active plain yogurt
    1/2 C cilantro, chopped


Heat oil in large stock pot on med-high heat. When hot, add chicken. Cook for 5-6 minutes until mostly cooked. Add potato, onion and garlic. Continue cooking about 5 minutes or until potatoes are mostly cooked through. Add chicken broth, tomatoes and corn. Cook on medium heat for 15 minutes. Add salsa con queso and yogurt. Continue cooking for 15 minutes or so to meld flavors. Top with cilantro. Makes 13 1-cup servings. Enjoy
