    2 tsp veggie oil
    1 cup chopped onions
    3/4 cup chopped Green Peppers
    4 cloves Garlic
    1 can Hunts Diced Tomatoes w/ Basil, Garlic, and Oregano
    1 large can Chicken breast
    2 cups Chicken Broth
    1 can cannelli beans (white navy beans)
    1 cup cooked Brown Rice
    1 1/2 cups shredded fresh spinach
    Italian seasoning to taste
    red pepper flakes to taste


Saute onions, peppers and garlic in oil until soft. Add tomatoes and cook until juices are evaporated. Add chicken, drained and rinsed beans, seasonings, broth and rice. Simmer at least 15 minutes for flavors to blend. Stir in shredded spinach just before serving.
