Introduction

Ingredients

    1 can black beans, drained and rinsed in cold water
    1/2 small onion, chopped
    1 garlic clove, chopped
    1/2 red pepper, diced
    2 tsp olive oil
    Juice of 1/3 lime
    3 tbsp chopped fresh cilantro
    Salt and pepper to taste
    1 jalapeno pepper or tabasco sauce dash
    1 tsp cumin

Directions

Saute onion, garlic and red pepper in olive oil. Add cumin and heat till fragrant. Add beans and heat through. Just before serving, add cilantro and lime juice.
