    4 salmon fillets - about 100g each
    1 clove garlic, minced
    1 carrot, julienned
    1 zucchini, julienned
    1 yellow/orange/red pepper, julienned
    1/2 cup snow peas, sliced lengthwise
    4 tsp of lemon juice
    2 tsp sesame oil
    4 large pieces of parchment paper
    1 tsp olive oil
    1 small scallion


Makes 4 - 1 parcel servings.
Cut four lengths of parchment paper about 18" long. Fold in half and cut into a lopsided half moon shape. You'll be placing your food in here and folding the edges.
Preheat your oven to 400 degrees F. Split your veggies into 4 equal groups.

To make the parcels: Open the paper and lightly coat your paper with olive oil. On one half of the paper, place 1/4 of your carrot pieces on the bottom, stacking them with the zucchini. Place the salmon on top of veggies then put the peas, scallions and garlic. Add any other fresh herbs you may enjoy. Salt and pepper to taste. Drizzle sesame oil on the top. Fold paper over and pinch edges together, making tiny folds all the way around until completely sealed. Repeat for all the parcels.

Bake in center of oven for about 15 to 20 minutes. The parcels will puff up and get golden. Serve individually on plates. Be careful of the steam when cutting the package.
