    2 lbs (900g) of diced butternut squash (about 1 large squash)
    1 small diced onion
    2 cloves garlic, minced
    4 cups water
    1 tbsp thai curry paste (I use yellow)
    1 tsp olive oil


Sautee onion and garlic in olive oil till soft. Add diced pumpkin, water and curry paste. Bring to simmer and cook till pumpkin soft, about 15 or so minutes. Using a hand blender, puree soup until velvety consistency. If using a blender, beware of the hot liquid - better to let it cool a little before pureeing, then reheat.
