Sweeten pancakes, waffles, muffins or yoghurt with this fruit mix. Sweeten pancakes, waffles, muffins or yoghurt with this fruit mix.
Number of Servings: 12


    2 cups frozen strawberries, thawed
    1 cup frozen blue berries, thawed
    1 mango, diced
    2 packets of Stevia (or Xylitol)
    Cornstarch paste (about 1tsp cornstarch and 2 tsp water)


Makes about 12 - 2 cube servings
Place fruit in a saucepan over low heat. Cook for 5 minutes until mango soft. Using a hand blender (or regular blender), puree the mix then add back to the pan. If runny, you can use the cornstarch mix to thicken a little, letting it cook for 2 more minutes (simmer). Add enough Stevia to sweeten to your taste. If you add too much, just add a squeeze of lemon juice. Freeze sauce in an ice cube tray. Once frozen, put into a zip lock back. Thaw 2 cubes for an easy serving.
