    4 (4 oz) Tyson Boneless Skinless Chicken Breasts
    Salt and Pepper
    2 Tbls olive oil
    2 cups Uncle Ben's Insant Rice
    2 1/2 cups frozen broccoli florets
    1 green onion, sliced
    1 (14.5 oz) can diced tomatoes, well-drained
    1/2 cup fat free Italian salad dressing


Sprinkle Chicken lightly with salt and pepper. Heat oil in large skillet over medium-high heat. Cook, covered, 5 minutes per side. Meanwhile, cook rice according to package directions. Add broccoli to chicken in skillet; cover. Reduce heat; cook over medium heat 4-6 minutes or until internal juices of chicken run clear (instant-read thermometer should read 170 F when inserted into the thickest part of chicken) and broccoli is at desired tenderness.

Serve chicken on top of rice; top with broccoli, chopped tomatoes, green onions and salad dressing.
