    1 .5 cups Quick Oats
    1/2 cup oat bran
    1 cup shredded wheat bites
    1 cup walnuts
    1.75 cups dried fruit (such as apricots, plums, cranberries)
    1 tsp cinnamon
    1/2 tsp salt
    2 large eggs
    1/3 cup honey
    1/2 cup ground flaxseed
    1 tsp vanilla extract
    1 cup chocolate chips


1 - Preheat oven to 350 degrees. Lightly oil or spray an 8x8 inch baking pan & set aside.
2 - Place first 7 ingredients into food processor and pulse mixture until finely chopped (the dried fruit will be the size of a dried pea or lentil).
3 - In a large bowl, whisk eggs, honey, vanilla, & ground flaxseed together . Add the oatmeal mixture and chocolate chips. Stir to combine.
4 - Transfer to baking pan and flatten down gently with back of a spoon or spatula to spread evenly.
5 - Bake about 18 min until the edges turn golden brown & bars are done.
6 - Let bars cool completely in pan before slicing and serving.
** These bars freeze quite well, so leftovers can be wrapped in individual portions to grab & go when ready!
