    1 tsp Salt
    4 cups Water
    2 1/2 cups rice
    12 medium eggs, beaten
    7 cups 2% milk
1 tsp each cinnamon ground and nutmeg ground
    1/2 cup granulated sugar

In a large sauce pot about 6 qt. size, cook the rice, salt and water for 20 minutes once it comes to a simmer and turn down to low. Do not drain. When done, in the same pot, add the milk, beaten eggs, sugar, splenda and spices. Stir well. Pour in to a sprayed large baking dish. ( about 9" x 13"x 3"). Bake at 350o for 45 to 60 minutes until center of pudding is set and top is slightly browned. Pudding forms a custard on top. Serve warm or cold.
