Ingredients

    4 tbsp oil
    6 curry leaves
    1/2 tsp mixed onion & mustard seeds
    8 medium tomatoes sliced
    1 tsp ground corriander
    1 tsp chili powder
    1 tsp salt
    1 tsp ground cumin
    1 tsp garlic pulp
    675g skinned chicken, cubed
    150ml/ 2/3 cups water
    1 tbsp sesame seeds roasted
    1 tbsp chopped fresh coriander/cilantro

Directions

Heat the oil and add curry leaves and mixed onion and mustard seeds
Lower heat and add tomatoes
Mix in a dish, ground coriander, chili powder, salt, ground cumin and garlic
Add mixed spices to the tomatoes and stir
Add chicken and mix together
Stir fry for approx 5 minutes
Add water and continue cooking and stiring until chicken is cooked
Add sesame seeds and fresh corriander and serve

I like to add a couple of chopped fresh chilies once cooked just for a little extra kick
