Ingredients

1 tbsp corn oil
3/4 cup chopped onion
2 cloves garlic
1 cup chopped tomato
1/2 cup chopped bell pepper
1/4 cup chopped cilentro
2 tbsp tomato paste
2 tbsp lemon juice
3 oz fresh yellow fin tuna
1 tbsp curry powder
2 tsp Arabian Spice Mix (if not available you can add an additional 1/2 tbsp curry powder)
1 tsp ginger or you can add 1 tsp freshly grated ginger
2 Maggi chicken stock cubes
8 cups water
2 tbsp chopped cilentro (for garnish)
Directions
saute onion in oil
when softened add tomato, garlic, bell pepper, and cilentro
add the spices and stock cube
when tomato is mushy, add tomato paste, lemon juice, and water
bring to a boil and then simmer for 10 minutes
add the tuna and simmer for about 8-10 minutes
remove tuna and debone. flake the tuna.
before adding tuna back into pot, puree the soup so that it is nice and smooth (adds a nice thickness)
add the flaked tuna back to the pot and simmer for another 5 minutes
add the 2 tbsp chopped cilentro and stir in.
Serve in soup bowls
