Introduction

This is a very modified recipe I found on food.com for Taco Bell Quesadilla sauce. But this version is a lot less sweet and thicker on the veggies. Although the way I make it, it's a little bit of nothing as for as calories go!

It goes great with chicken or shrimp on a whole wheat tortilla!!

Number of Servings: 16

Ingredients

    1 Cup Vanilla Yogurt (NOT PLAIN!!!)
    2 Tablespoons Minced Jalepenos
    2 Tablespoons of Jalepeno Juice (I buy Sliced Jalepenos in a jar, so there is juice in there.)
    2 Tablespoons Minced Red Pepper
    2 Teaspoons Cumin
    2 Teaspoons Paprika
    1/2 Teaspoon Cayenne Pepper
    2/3 Teaspoon Garlic Powder

Directions

It helps if you strain the yogurt first although I've made it without doing that. Since it's not plain, it doesn't strain quite as much, but the vanilla adds a sweetness that you'll want in in your sauce.

1. Mince both the Jalepeno and Red pepper as fine as you possibly can.
2. In a bowl, mix the peppers, the pepper juice, and the yogurt until well blended
3. Add the rest of the spices and mix until evenly mixed,
4. And it's ready!

Keep refrigerated.
Makes about 16 tablespoon sized servings
