Introduction

Ingredients

    Zatarains Smothered Chicken Rice Mix, 6 cup
    Chicken Breast, no skin, 6 ounces
    Yellow Sweet Corn, Canned, 1 cup
    Cream of Mushroom Soup, 1 can (10.75 oz)
    Water, tap, 2.5 cup (8 fl oz)
    Country Crock, Shedd's Spread Country Crock Plus Calcium & Vitamins (Soft), 1 Tbsp

Directions

Cut chicken into bite size pieces. Melt butter and fry chicken pieces until no longer pink over medium heat. Mix in the smothered chick mix, and stir to coat chicken. Put in the drained corn, water and cream of mushroom soup. Bring to a boil, making sure to scrape the bottom so the bottom won't stick and to get all loose pieces up. Turn heat down to low and cook for 25 minutes, stirring occupationally. Let sit for 5 minutes and serve.

Makes 6 1 cup servings.

Freezes nicely for future quick lunch and/or dinner.
