    3 TBS dry sherry or rice wine
    2 TBS soy sauce
    1 TBS corn starch
    1 tsp dark sesame oil
    1 tsp brown sugar
    1/4 tsp black pepper
    1 pound pork tenderloin cut into 1/8 inch strips
    2 TBS olive oil
    5 c coarsely chopped bok choy
    2 cloves garlic


In medium bowl, stir together 1 1/2 TBS of the sherry, soy sauce, cornstarch, sesame oil and pepper. Add pork and toss to coat. Marinate at room temperature for 15 minutes.

In large nonstick skillet or wok over high heat, heat 1 TBS of oil. Add Bok Choy. Stir fry 2 minutes. Cover and cook until wilted (about 2 minutes). Remove to a plate.

Add remaining TBS of oil to skillet. Add garlic, saute 15 seconds. Add port mixture. Stir-fry until just cook through. About 3-4 minutes. Add Boc Choy and remain TBS of Sherry. Cook until heated through. Serve immediately.
