Ingredients

    3 1/2 cups black beans, low sodium
    1 cup chicken broth
    3 carrots, chopped
    1 shallot, chopped
    2 cloves garlic, minced

Directions

Spray frying pan with oil, add diced carrots and chopped shallot and cook until soft, add the garlic and cook just until fragrant. Add chicken broth and beans, cover and cook until carrots are very tender.
