    1 T minced garlic
    10 oz sliced mushrooms
    10 oz frozen spinach
    2 eggs
    6 egg whites
    1/4 tsp salt
    1/4 tsp pepper
    1/2 c crumbled feta cheese


Microwave spinach and squeeze out juice. Spray a pan with non-stick spray. Saute garlic and mushrooms together until cooked. Add spinach and mix. Mix rest of ingredients in a bowl. Add to pan with garlic, mushrooms, and spinach. Cook on first side until browned on bottom. Flip and cook until thoroughly cooked. Makes 4 servings.
