    Olive Oil, 1 tbsp
    Ham, extra lean, (5% fat), 1 cup, diced
    Onions, raw, .5 cup, chopped
    Egg substitute, liquid (Egg Beaters), 2 cup
    Hashed Browns (hash browned potatoes), 3 cup


Over medium heat, heat olive oil in pan. Chop onions and put in pan with olive oil. Pour in hash browns and cook until heated through. Add ham, and again, cook until just warm. Now pour the egg substitute over all this and cook, stirring as it cooks, until egg substitute is cooked thouroughly.

Serve with fruit.

Reheats nicely in the microwave.
