This has a great taste - it's a little different, but in a good way. This has a great taste - it's a little different, but in a good way.
Number of Servings: 4


    4 small boneless/skinless chicken breasts
    1 tbsp honey
    1 tbsp orange juice
    1/4 tsp ground ginger
    1/4 tsp black pepper
    1/4-1/2 tsp soy sauce (lite/low sodium)
    Dash red pepper (optional)
    3/4 cup cornflakes
    1/2 tsp parsley flakes


1. Rinse chicken. Combine honey, orange juice, ginger, soy sauce and peppers together. Brush over chicken. (If you'd like, you can double this mixture and use it as a marinade. I let my chicken sit in the mixture for about an hour and a half)
2. Combine cornflakes and parsley flakes. Coat chicken with mixture.
3. Place chicken in a well-PAMmed baking dish. Bake, uncovered, in a 350 degree oven for 18-20 minutes or until cooked through.

Makes four servings.
